Second, I think you should vary the cracker used for the demonstrations, maybe a multi-grain cracker or sliced cucumbers (like on your web-site), or even bagel wedges.

Your smoked salmon is the best. I thought I loved the lobster, until I tried the smoked salmon and found it had half the calories. Some people comment that the salmon is a little salty."
